- 1Velvet the beef: Toss sliced beef with baking soda. Let sit 15 minutes, then rinse well. Pat dry. Marinate in soy sauce and cornstarch for 5 minutes.
- 2Mix sauce: Whisk together oyster sauce, soy sauce, brown sugar, sesame oil, beef broth, and cornstarch in a small bowl. Set aside.
- 3Blanch broccoli: Cook broccoli in boiling salted water for 90 seconds. Drain and rinse with cold water. Set aside.
- 4Sear beef: Heat 2 tbsp oil in a wok or large skillet over high heat until smoking. Add beef in a single layer. Sear without stirring for 60 seconds, then stir-fry 30 more seconds. Remove to a plate.
- 5Cook aromatics: Add remaining oil. Add garlic and ginger. Stir-fry 30 seconds until fragrant.
- 6Combine: Add broccoli and beef back to the pan. Pour sauce over everything. Toss and stir-fry 1-2 minutes until sauce thickens and coats everything. Serve immediately over rice.
