Warm and comforting Red Lentil Soup – packed with protein and flavor!
Ingredients
- 2 cups red lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, cubed
- 4 cloves garlic
- 1 liter vegetable broth
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse lentils well.
- Saute onion and garlic until soft.
- Add carrots, potatoes, and spices.
- Add lentils and broth.
- Simmer for 25 minutes until soft.
- Blend partially for creamier texture.
- Serve with bread.
