Warm and comforting Red Lentil Soup – packed with protein and flavor!

Ingredients

  • 2 cups red lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 potatoes, cubed
  • 4 cloves garlic
  • 1 liter vegetable broth
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse lentils well.
  2. Saute onion and garlic until soft.
  3. Add carrots, potatoes, and spices.
  4. Add lentils and broth.
  5. Simmer for 25 minutes until soft.
  6. Blend partially for creamier texture.
  7. Serve with bread.
