Ingredients

  • 2 pounds chicken wings drumettes and flats separated
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional
  • Cooking spray or oil mister

Equipment

  • Air Fryer essential for this recipe

Method

  1. Pat the chicken wings completely dry with paper towels. This is crucial for achieving crispy skin.
  2. In a large bowl, combine baking powder, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using).
  3. Add the dried chicken wings to the bowl and toss thoroughly to coat all wings evenly with the seasoning mixture.
  4. Lightly spray the air fryer basket with cooking spray or use an oil mister to prevent sticking.
  5. Arrange the wings in a single layer in the air fryer basket, making sure they don't overlap. Work in batches if necessary.
  6. Set the air fryer to 380°F (190°C) and cook for 12 minutes.
  7. Flip the wings over using tongs and cook for another 8-10 minutes until golden brown and crispy.
  8. Check that the internal temperature has reached 165°F (74°C) using a meat thermometer.
  9. Remove wings from the air fryer and let rest for 2-3 minutes before serving.
  10. Serve hot with your favorite dipping sauces like buffalo sauce, ranch, or blue cheese dressing.

Notes

Pro Tips:
• Baking powder is the secret to extra crispy wings! It helps dry out the skin for maximum crispiness.
• Don't skip patting the wings dry – moisture is the enemy of crispy skin.
• Don't overcrowd the air fryer basket. Cook in batches if needed for best results.
• For even crispier wings, let them rest uncovered in the fridge for 1-2 hours before cooking.
Storage:
Store leftover wings in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F for 5-7 minutes to restore crispiness.
Variations:
• Buffalo Wings: Toss cooked wings in buffalo sauce
• BBQ Wings: Brush with your favorite BBQ sauce before the last 2 minutes of cooking
• Asian-Style: Add ginger and five-spice powder to the seasoning mix
• Lemon Pepper: Add extra lemon zest and black pepper to the seasoning
