Easy Peanut Butter Energy Balls

Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup mini chocolate chips
  • 1/4 cup ground flaxseed optional

  • Spatula

Method
 

  1. In a large mixing bowl, combine rolled oats, peanut butter, honey, mini chocolate chips, and ground flaxseed (if using). Stir until the mixture is well combined and sticky.
  2. Scoop out about a tablespoon of the mixture and roll it between your hands to form a ball. Repeat with the remaining mixture.
  3. Place the formed energy balls on a parchment-lined plate or baking sheet.
  4. Refrigerate the energy balls for at least 30 minutes to firm them up.
  5. Once firm, enjoy your energy balls! Store any leftovers in an airtight container in the refrigerator for up to one week.

Notes

Customize these energy balls by adding cinnamon, dried fruit, or seeds, or use different nut or seed butters instead of peanut butter. Store in an airtight container in the refrigerator for up to one week or freeze for longer storage.
