  1. 1Pat chicken thighs dry with paper towels. Season generously on both sides with salt, pepper, paprika, and Italian seasoning.
  2. 2Heat olive oil in a large oven-safe skillet or cast iron pan over medium-high heat. Add chicken thighs smooth-side down and sear for 5 minutes without moving them until deep golden brown. Flip and cook 4 more minutes. Remove to a plate.
  3. 3Reduce heat to medium. Add butter to the same pan. Once melted, add minced garlic and cook, stirring, for 60 seconds until fragrant (don't let it brown).
  4. 4Pour in chicken broth and scrape up any browned bits from the bottom of the pan — that's pure flavor. Pour in heavy cream and stir to combine. Bring to a gentle simmer.
  5. 5Return chicken to the pan and spoon sauce over the top. Simmer on medium-low for 5-7 minutes until the sauce thickens and chicken is cooked through (internal temperature 165°F / 74°C). Garnish with parsley and Parmesan if using. Serve immediately.
