- 1Pat chicken thighs dry with paper towels. Season generously on both sides with salt, pepper, paprika, and Italian seasoning.
- 2Heat olive oil in a large oven-safe skillet or cast iron pan over medium-high heat. Add chicken thighs smooth-side down and sear for 5 minutes without moving them until deep golden brown. Flip and cook 4 more minutes. Remove to a plate.
- 3Reduce heat to medium. Add butter to the same pan. Once melted, add minced garlic and cook, stirring, for 60 seconds until fragrant (don't let it brown).
- 4Pour in chicken broth and scrape up any browned bits from the bottom of the pan — that's pure flavor. Pour in heavy cream and stir to combine. Bring to a gentle simmer.
- 5Return chicken to the pan and spoon sauce over the top. Simmer on medium-low for 5-7 minutes until the sauce thickens and chicken is cooked through (internal temperature 165°F / 74°C). Garnish with parsley and Parmesan if using. Serve immediately.
