- 1Season shrimp with salt, pepper, and Italian seasoning.
- 2Heat olive oil in a large skillet over medium-high. Sear shrimp 1-2 minutes per side until pink and curled. Remove to a plate.
- 3Reduce heat to medium. Add garlic and sun-dried tomatoes, cook 1 minute. Add chicken broth and scrape up any bits.
- 4Pour in heavy cream, bring to a simmer. Add Parmesan and stir until melted. Add spinach and wilt, 1-2 minutes.
- 5Return shrimp to the pan, toss gently to coat in sauce. Taste and season. Garnish with basil.
